In a large soup pot in 2 tablespoons of Olive Oil, saute' 2 chopped carrots, 1 stalk celery. Add 1 cup ham, 2 links smoked sausage, and 1 cup cooked turkey or chicken. Add 2 - 28 oz. cans tomatoes, 4 cups chicken stock, 2 cups of water, beans and spices. Cover partially, reduce heat and simmer 2-3 hours until beans are tender. Add water as needed. When beans are tender add the pasta and cook for about 10 minutes until pasta is tender. Serve with hot bread, salad, chips or cornbread.
